I notice that the script is listing the categories in 3 columns. Is there a way to reduce that to 2 columns, or 1 column?

Yes there is. Edit the template called subdirs.html - You can find it by going to the Control Panel >> Template Manager >> 1. Default Category/Directory Templates >> Sub Categories/Directories Style 1 (subdirs.html) - Remove the %%subdirs3%% variable from it to use only 2 columns. Remove the %%subdirs3%% and %%subdirs2%% variables for only one column.
