When I edit my main category template (defdir.html) or link info template (linkinfo.html) the changes seem to be saved to the templates, but when I preview categories or generate categories these changes does not show.

You are most likely using custom templates in the categories where your changes does not show. Double check that the categories you are viewing where the changes does not show is not using a custom template set. If the categories is set to use a custom template set then you will need to edit the custom template set's templates instead of the default category templates. You can see what custom templates is in use by browsing the categories in the Directory Manager. The custom template names are listed in the 'Template' column.
