My question is, once a topic has been posted by a member is there any way the administrator can change it to a sticky topic?

Hi Murray,
Not at this point in time. We will be looking into adding this for future versions.
An alternative for now could be to copy the message text and post a sticky topic and maybe then indicate that the original post has been made by the specific user who posted the message.

On a similar theme, once a sticky topic has been made, how do we go about making it a normal topic once it has served its purpose?

Currently the only way to get rid of the sticky topic is to delete it. Future versions will have an unstick option when you edit the message.
